Why do brownies need eggs? down-arrow

Eggs play an important role in giving brownies their iconic texture and structure. Eggs work as the binding agent that helps hold the ingredients together, which gives brownies structure and ensures they won't fall apart when cutting. Eggs also add moisture to the batter making it soft and fudgy, leavens the brownie batter to give it a volume, and adds richness to the overall flavour. It is also possible to use substitutes for eggs like vinegar and baking soda, silken tofu and flaxseed meal if you are a vegetarian.
