1. Mug Brownie
Ingredients:
- 1 tbsp coconut oil
- 2 tbsp milk
- ¼ tsp vanilla extract
- 1 ½ tbsp all-purpose flour
- 1 tbsp sugar
- 1 tbsp unsweetened cocoa powder
- ⅛ tsp salt
- 2 tsp mini chocolate chips (optional)
Directions:
- Put the coconut oil in a microwave-safe mug.
- Add the milk, vanilla, flour, sugar, cocoa and salt, and whisk until completely mixed.
- Add the chocolate chips, and mix.
- Microwave for 30 to 40 seconds until it’s firm to touch. Let cool for a few minutes and enjoy.
2. Creamy Berry Pies
Ingredients:
- ¼ cup whipping cream
- 2 tsp sugar
- ¼ cup vanilla Greek yogurt
- 15 fresh blueberries
- 15 fresh raspberries
Directions:
- In a bowl, beat the cream until soft peaks form.
- Add the sugar and beat until stiff. Then add yogurt.
- Put the mixture into 15 small serving cups. Top each with one blueberry and raspberry each.
- Chill for 4 hours, then serve.
3. Ice cream
Ingredients:
- 2 bananas
- ¼ cup peanut butter
- Unsweetened shredded coconut for garnish
Directions:
- Add the bananas and the peanut butter to a food processor and mix until smooth.
- Chill for a few hours.
- Garnish with shredded coconut and serve.
4. Watermelon Pizza
Ingredients:
- ½ plain yogurt
- 1 tsp honey
- ¼ tsp vanilla extract
- 2 large round slices of watermelon
- ⅔ cup sliced strawberries
- ½ cup halved blackberries
- 2 tbsp fresh mint leaves
Directions:
- In a small bowl, add the yogurt, honey and vanilla.
- Spread the yogurt mixture over each slice of the watermelon.
- Cut each slice into 8 wedges.
- Top with strawberries, blackberries and mint.
- Serve chilled.
5. Chocolate Hummus
Ingredients:
- 1 can of chickpeas
- ⅓ cup tahini
- ⅓ cup olive oil
- ⅓ cup water
- 2 tbsp confectioners sugar
- ½ tsp vanilla extract
- ¼ tsp salt
- 150 gm chocolate, melted
Directions:
- Put the chickpeas, tahini, oil, water, confectioner’s sugar, vanilla and salt in a food processor.
- Add the melted chocolate and process it until uniformly combined.
- Serve with chunks of bread or fruit.
6. Chocolate Avocado Milkshake
Ingredients:
- 1 avocado
- 1 ½ cups milk
- 3 tbsp unsweetened cocoa powder
- 3 tbsp brown sugar or maple syrup
- 2 tbsp melted chocolate chips
- 1 tbsp vanilla extract
- 12 ice cubes
Directions:
- Place the pitted avocado in a blender. Add the milk, cocoa, brown sugar or maple syrup, melted chocolate and vanilla.
- Puree until smooth. Add the ice and process until thick and frosty.
- Transfer to a glass, sprinkle cocoa powder on top and serve.
7. Strawberry Cheesecake
Ingredients:
- 1 ½ tbsp graham crackers
- ½ cup plain Greek yogurt
- 1 tbsp strawberry jam
- ¼ tsp lemon zest
Directions:
- Crumb the Graham crackers in a mixer.
- In a serving bowl or jar, layer the crumbs, then the yoghurt, then the jam and lemon zest on top. Top it off with more crumbs and serve chilled.
8. Bananas Foster
Ingredients:
- 1½ tbsp unsalted butter
- ¼ cup brown sugar
- 2 bananas, halved lengthwise
- Vanilla essence
- ¼ cup dark or light rum
Directions:
- In a pan, place some butter and melt.
- Add sugar and stir continuously.
- Add the banana halves side down on the pan, and cook for 2-3 minutes.
- Turn the bananas over and continue cooking.
- Add the vanilla essence and stir into the melted butter.
- Add the rum and ignite the alcohol using a long lighter.
- Turn off the heat and let the fire settle.
- Lay spoonfuls of the sauce over the bananas and cook for one more minute.
- Serve hot.
9. Roasted figs
Ingredients:
- 35 figs, halved
- 3 tbsp vinegar
- 2 tbsp honey
- ½ tsp vanilla extract
- 1 tsp kosher salt
- 5 sprigs rosemary
- 2 tbsp unsalted butter
- ½ tsp lemon zest from 1 lemon
Directions:
- Preheat the oven
- Place the figs on a baking sheet. Drizzle the vinegar, honey and vanilla on them. Sprinkle salt on top.
- Add the rosemary to the sheet.
- Bake for approximately 10 minutes, until the figs soften.
- Remove the sheet, flip the figs, add the butter to the baking sheet and put in the oven again.
- Remove from the oven and let it cool. Discard the rosemary sprigs.
- Add the lemon zest to the figs and transfer to a serving plate.
