These mini pancakes are made with cocoa powder and topped with a rich chocolate ganache.

Pancakes are fun but mini pancakes are exciting. Any food, when in a mini size, somehow becomes more delicious and special. Trust us, it's the highest form of baking science, based entirely on feelings of excitement.

For the Pancake:

  • Flour – 1 Cup
  • Cadbury Cocoa Powder – ¼ Cup
  • Egg - 1
  • Milk – 1 Cup
  • Melted Butter – 3 Tablespoon
  • Salt – A pinch
  • Baking Powder – 1 Tablespoon
  • Vanilla Essence – 1 Teaspoon
  • Sugar – 4 Tablespoons

For the Ganache:

  • Cadbury Dairy Milk – 1/3 Cup
  • Fresh cream – 1/3 Cup

Ganache:

To make the ganache, you need a ratio of 1:1 Cream to Chocolate.
Chop the chocolate finely and place it in a heat proof bowl and heat cream on the stovetop until just simmering. (If it is boiling, the cream is too hot and could separate or even burn the chocolate. Once you see little simmers around the edges, turn off the heat and immediately pour the warm cream over the chocolate.

Let the 2 sit for a few minutes before stirring, then stir slowly until smooth.

Pancake:

In a bowl, mix all wet ingredients separately – Milk, Egg, vanilla essence and butter.

In a separate bowl, mix all dry ingredients separately – Flour, Cocoa powder, Salt, Baking powder and Sugar.

Now add the wet ingredients into the dry ingredients and mix using hand whisk. Mix well till no lumps are formed.

Take a frying pan and brush butter onto the pan and add small dollops of the mixture on medium flame.

When bubbles are formed on top and on the sides, flip the pancake and fry for another minute or two.

Take the cooked pancakes onto a plate and drizzle the Chocolate ganache on top. You can have it with fruits of your choice and sprinkle icing sugar on top if desired.
