The trusty pressure cooker needs no introduction, but what is it doing in the desserts corner? Why, to make desserts of course! The battered and worn pressure cooker can easily double as an oven if you follow the right recipes and know how to work with the equipment.
When cooking under pressure, heat is able to penetrate food much more quickly since liquids are able to reach temperatures far beyond their normal boiling point. Since the cooking environment is sealed, none of the precious moisture or flavor is able to escape from the food during the cooking process
This means cakes, puddings, crisps and more can be ready in as little as 20-40 minutes instead of the usual hour or more. For busy home bakers like you, with little time, being able to make a homemade dessert nearly twice as fast is a huge advantage.
Pressure Cooker Mawa Cake
One of the easiest desserts to make is the plain old mawa cake, which graces many desi sweetshops. Now you can bake your own inside the hot furnace of the press cooker!
Ingredients:
- 250 gm mawa/khoya
- 150 gm sugar
- 4 eggs
- 125 gm all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp cardamom powder
- 50 gm butter, melted
Instructions:
- Grease the inner cooking compartment of the pressure cooker with butter. Line the bottom with parchment paper.
- In a large mixing bowl, stir the mawa and sugar together until light and fluffy, about 5-7 minutes.
- Gradually mix in the eggs until fully combined.
- In a separate bowl, whisk together the flour, baking powder and cardamom powder.
- Gradually blend the dry ingredients into the mawa mixture until just mixed.
- Pour in the melted butter and stir until a smooth batter forms.
- Transfer the batter to the prepared pressure cooker compartment. Tap to release any air bubbles.
- Secure the lid and cook at high pressure for 35 minutes.
- Once cooking is complete, allow the pressure to release naturally for 10 minutes. Then release any remaining steam.
- Remove the lid and insert a skewer to check if the cake is done. It should come out clean.
- Remove the cake from the cooking compartment. Cool, slice, and serve.
Pressure Cooker Bread Pudding
Bread pudding is an unusual dessert but it oozes comfort in every bite. Get that pack of stale bread and combine with custard to make the most of this delicious dessert.
Ingredients:
- 500 gm bread cubes (stale bread works best)
- 500 ml milk
- 100 gm butter, melted
- 100 gm brown sugar
- 4 eggs
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- Pinch of salt
Instructions:
- Grease the inner pot of the pressure cooker with butter.
- In a large bowl, combine the bread cubes, milk, melted butter, brown sugar, eggs, vanilla, cinnamon and salt. Mix until all the bread is evenly coated.
- Pour the bread mixture into the prepared pressure cooker pot. Use a spoon to evenly distribute.
- Secure the lid and cook at high pressure for 15 minutes.
- Once cooking is complete, allow the pressure to release naturally for 10 minutes. Then release any remaining steam.
- Open the lid and insert a skewer to check if the pudding is set. It's done if the skewer comes out clean.
- Serve the bread pudding warm, topped with extra milk or a drizzle of caramel sauce if desired.
Pressure Cooker Chocolate Cake
This one is perhaps the easiest cake to make inside a pressure cooker—the cocoa powder-rich chocolate cake. Combine ingredients, set them at the bottom of the pressure cooker and bake it on high for a decadent treat.
Ingredients:
- 175 gm all-purpose flour
- 50 gm Cadbury Cocoa Powder
- 175 gm sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 125 ml vegetable oil
- 250 ml water
- 1 tbsp vinegar
- 1 tsp vanilla extract
Instructions:
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda and salt.
- In a separate bowl, whisk the eggs until light and fluffy. Add the oil, water, vinegar and vanilla and whisk to combine.
- Pour the wet ingredients into the dry ingredients and stir just until no flour streaks remain.
- Grease the inner pot of the pressure cooker with oil. Pour in the batter and smooth the top.
- Secure the lid and cook at high pressure for 25 minutes.
- Once cooking is complete, allow the pressure to release naturally for 10 minutes. Then release any remaining steam.
- Remove the lid and insert a skewer to check if the cake is done. It should come out clean.
- Remove the cake from the cooker and let it cool completely before slicing.
