Making Balushahi at Home

  • 2 cups of all-purpose flour
  • ½ cup of ghee (clarified butter), and extra for frying
  • 4 tablespoons of yogurt
  • 1 teaspoon of baking powder
  • A pinch of salt
  • 1 cup of sugar
  • ½ cup of water
  • 2 cardamom pods
  • Saffron strands (optional)
  • Pistachios or almonds for garnishing

Method:

To Prepare the Dough

Step 1:Start by sifting the all-purpose flour, baking powder and salt, to achieve that flaky texture.

Step 2:Blend in the ghee until the flour mixture resembles breadcrumbs. This is what gives Balushahi its melt in the mouth quality. Then gently mix in the yogurt to form a firm dough.

Shaping & Frying

Step 1:Create balls of the dough about the size of a lemon, slightly flattening them with an indentation in the center. This unique shape guarantees that the cooking process is evenly distributed.

Step 2:Fry the dough in ghee over medium-low heat until it turns a golden-brown color. Patience is crucial here; slow cooking ensures a fully cooked interior and a crispy exterior.

Preparing the Sugar Syrup

Step 1:Dissolve sugar in water and add crushed cardamom for flavor. Simmer until it reaches the desired consistency. For a touch of exoticness, infuse saffron into the syrup.
