1. Blueberry Oreo Tart

The process of making a tart is easy, the ingredients required are simple, but the final dessert’s flavor and texture are complex and satisfying. Here’s how you can make a tart without baking!
Ingredients:
- 24 crushed Oreo cookies
- 5 tablespoons unsalted butter
- ½ teaspoon kosher salt
- - 1 packet gelatin
- - 500 gm blackberries
- - 1 tablespoon orange juice
- - ⅔ cup whipping cream
- - ⅔ cup condensed milk
- - 150 gm mascarpone
- - ¼ cup mini oreos
Directions:
- In a large bowl, mix the Oreo cookies, butter and salt.
- Press the mixture into the bottom and sides of a tart pan. Freeze until chilled.
- Cook the gelatin on medium heat and add 3 tablespoons of water, whisking constantly. Set aside to cool.
- Blend the blackberries into a smooth puree. Strain in a sieve into a bowl.
- Set aside 1 tablespoon of the puree for topping. To the rest, add the orange juice, gelatin and salt.
- Beat the cream until stiff peaks appear. Add the condensed milk and beat until thoroughly combined.
- Set aside a few spoons of cream for topping. To the rest, add the mascarpone and blackberry mixture.
- Pour this filling onto the Oreo crust and refrigerate for at least 2 hours.
- Mix the remaining blackberry puree and whipped cream, and add a dollop of the mixture to the middle of the tart.
2. Orange Creamsicles

For the orange base:
- 350 gm frozen orange juice concentrate
- ½ cup heavy cream
- ¼ cup granulated sugar
- ½ tsp pure vanilla extract
- ⅛ tsp kosher salt
- Orange food coloring (optional)
For the vanilla yogurt base and assembly:
- 1 cup full-fat plain yogurt
- 1 cup heavy cream
- ¼ cup granulated sugar
- 1 tsp pure vanilla extract
- ⅛ tsp kosher salt
Directions:
- Blend the orange juice concentrate, cream, sugar, vanilla and salt.
- Add food coloring (optional).
- Transfer the mixture to a bowl and refrigerate.
- In another bowl, whisk together the yogurt, cream, sugar, vanilla and salt. Cover and refrigerate.
- Pour a little bit of the yogurt mixture into an ice pop mold, then add the orange base. Continue layering, and insert wooden sticks.
- Freeze at least for 8 hours or overnight. Release from pops and serve.

Ingredients:
For the blackberry topping:
- 150 gm blackberries
- ¼ cup granulated sugar
- ½ lime juice
For the crust:
- 1 pack crushed graham crackers
- 5 tbsp. unsalted butter
- ¼ cup granulated sugar
For the cheesecake filling:
- - 1 cup heavy cream
- - 1 cup powdered sugar
- - 2 blocks cream cheese
- - ¼ cup yogurt
- - 1 tsp vanilla extract
- - Juice of 1 lime
- - Pinch of kosher salt
Directions:
- In a saucepan, add the blackberries, sugar and lime juice and mix on medium heat.
- Strain mixture into a bowl and set aside to cool.
- In a food mixer, grind the graham crackers, sugar and butter, until it looks like wet sand.
- Evenly add the crust mixture in a baking dish.
- In a large bowl, beat the cream and sugar until stiff peaks form. Add the cream cheese and sugar until smooth. Then add the yogurt, vanilla, lime juice and salt with the remaining whipped cream
- Pour the mixture over the crust and add spoonfuls of blackberry over the cheesecake. Swirl with a toothpick to make designs.
